not a theme

Established in 2023, Bratnbier brings the authentic taste of Germany’s most famous sausages to Los Angeles — a wide selection of wursts, proper sides and cold bier, served fast and served right.

Why a wurstery

A Wursterei is a specific thing in Germany — not a beer hall, not a restaurant with a German section on the menu. It is a place that makes sausage and takes that one job seriously. Everything else on the counter exists to support it.

Los Angeles has excellent German restaurants and excellent beer halls. What it had less of, in 2023, was somewhere doing the narrow thing properly: grinding to regional recipes, stuffing natural casing, and cooking from raw to order rather than holding cooked links in a tray.

Why Glendale

Because it is a neighbourhood that actually eats. Downtown Glendale has foot traffic in the evening, families out on a weeknight, and people who will happily sit at a long table next to strangers. A German hall does not work in a district that empties at six.

What we will not do

We will not put a wurst in a steam tray. We will not serve a Kölsch in a stein because the stein looks better in photographs. We will not pretend that our Hot Italian is German — it is on the grill because people ask for it, and we say so on the menu.

The rest is just cooking, done the same way every day.

What we believe

Four house rules

Cook it when they order it

A sausage held warm for twenty minutes is a different food from one that just came off the flame. There is no version of holding that we are willing to accept.

Fewer things, made better

Eight wursts, not thirty. A short menu is a promise that everything on it gets attention.

Say what it is

If a link is not German, we say so. If a side is bought in, we would rather not sell it. Being straight with people is cheaper than being clever.

The room is the point

Long tables, shared benches, a bit too loud. Eating alone next to someone is one of the better things a restaurant can offer.
