A sausage is a very short recipe, which means every single step shows up in the finished thing.
Grind cold
Meat and fat go through the plate cold — genuinely cold, close to freezing. Warm meat smears instead of cutting, the fat separates out during cooking, and you end up with a dry link swimming in its own grease. Temperature is the single most important variable in the whole process and the one most often ignored.
Season by region
A Nürnberger is marjoram-forward. A Thüringer leans on caraway and garlic. A Bavarian bratwurst runs mace, nutmeg and ginger. These are not interchangeable seasoning blends with different names on them — they are different sausages, and we treat them that way.
Emulsify
For the fine-ground links, the mix is worked with ice until the fat and protein bind into a smooth paste. Done right, the fat is suspended through the sausage rather than sitting in pockets. This is what gives a good bratwurst its texture, and it is entirely a matter of technique.
Stuff into natural casing
Natural casing is more work than collagen and it fails more often. It is also the only thing that gives the snap. That resistance when you bite through is the casing, and no synthetic substitute reproduces it.
Grill from raw, to order
Our wursts are fresh sausages, not cured or pre-cooked. Nothing goes on the flame until you order it. That is why there is a wait, and it is why the plate arrives too hot to pick up immediately.
Why natural casing matters
The snap is not a texture detail — it is the whole eating experience of a grilled sausage. Bite through a natural casing and it gives all at once, releasing the fat and steam trapped inside. Bite through a collagen casing and it yields gradually, like a skin.
Natural casing also breathes on the grill, which is how you get that blistered, mottled colour rather than a uniform brown.
It costs more, splits more often, and takes longer to work with. We have never seriously considered the alternative.
Cook it at home
Do not boil it in bier first
The American tailgate habit of simmering brats in bier before grilling comes from cooking for a crowd — it gets forty sausages to temperature at once. It also leaches out the fat and the seasoning, which is most of what you paid for.
If you buy links to cook at home: medium heat, turned often, twelve to fifteen minutes, no piercing. Piercing the casing lets the fat out, and the fat is the sausage.
