comes from

A short menu means a short supplier list, and a short supplier list means nowhere to hide.

Meat

Pork, veal and chicken from suppliers we can actually call, with fat ratios specified rather than accepted. The fat percentage in a sausage is a recipe decision, not something you take as delivered.

Casings

Natural hog casing throughout. Rinsed, soaked and checked by hand before every service, because a split casing on the grill is a lost sausage.

Mustard

Düsseldorf and Bavarian sweet mustard imported rather than approximated. There is no domestic substitute for either that we have been able to accept.

Cabbage

Fresh cabbage, fermented here in batches with nothing but salt and time. Never tinned, never bought pre-shredded in brine.

Bier

German breweries, brewed within the Reinheitsgebot tradition. The tap list rotates seasonally — Märzen in autumn, Bock in spring.

Bread

Rolls and rye baked for us rather than shipped frozen. A cold, wet roll ruins a good link faster than anything else on the plate.
